Spinach-Apple Salad with Maple-Cider Vinaigrette


Vinaigrette:

1/3 cup cider vinegar
2 tbsp maple syrup
1 tbsp Dijon mustard
¼ tsp salt
¼ tsp pepper
2/3 cup olive oil


Salad:

10 oz baby spinach
1 Gala apple
1 small red onion, thinly sliced
4 oz chopped walnuts

Servings: 8
